Mar’s Can’t Beat My Beet Recipe

If you enjoy spinach like I do you’ll love this easy beet recipe for a treat this Thanksgiving holiday. Using only the beet greens this recipe is fast and delicious that will have everyone asking for more.

INGREDIENTS:
 –
Beet greens (young and tender if possible)
 – Good sea salt (fleur de sel)
 – Freshly ground pepper
 – A pat of butter

PREPARATION:
Wash beet greens well ( they are sandy) and remove stems. Bring water to a boil : add greens and let boil for about 1-2 minutes till just tender. Remove and blot with a clean dish towel to remove excess water. Serve on a warmed platter with just a pat of butter, a sprinkle of salt and pepper to taste.
