This Isn’t Your Mother’s Meatloaf!

This is one fine recipe you will enjoy for years to come. It’s a keeper! No matter what people may say about meatloaf – this is one fabulous recipe to share with your family and friends. It’s totally worth the time and energy. Trust me on this.

This is what you will need:
3/4 cup minced white onion
3/4 cup minced green onion
1/2 cup minced celery
1/2 cup minced carrot
1/4 cup minced green pepper
1/4 cup minced red pepper
2 teaspoons smashed, peeled, and minced garlic
3 tablespoons unsalted butter
1 teaspoon salt
1/2 teaspoon cayenne pepper
1 teaspoon ground black pepper
1/2 teaspoon ground white pepper
1/2 teaspoon ground cumin
1/2 teaspoon ground nutmeg
1/2 cup half-and-half
1/2 cup catsup
1 1/2 pounds ground beef
1/2 pound ground pork
3 eggs, beaten
3/4 cup plain bread crumbs

Preheat oven to 350F. Sautée white and green onion, celery, carrot, green and red peppers, and garlic in butter until softened. Cool to room temperature.

Combine salt, cayenne, black and white pepper, cumin, and nutmeg. Stir into cooled vegetables. Add half-and-half, catsup, ground beef, pork, eggs and bread crumbs. Lightly for into a loaf. Place in a baking pan and bake for one hour. While meat loaf bakes, prepare gravy.


Meat Loaf Gravy
1 tablespoon peeled and minced shallot
2 tablespoons unsalted butter
1 pinch dried thyme
1 bay leaf
1 pinch ground black pepper
1 cup dry white wine
1 cup veal or beef stock
1 cup chicken stock
Salt and pepper to taste

Saut̩ shallot in 1 tablespoon of butter, until softened with thyme, bay leaf and black pepper. Add wine. Cook over high heat until reduced to a glaze. Add the stocks and boil to reduce by half, then swirl in the remaining tablespoon of butter. Season to taste with salt and pepper.

Cool meatloaf for 5 minutes. Remove to cutting board. Heat juices remaining in the pan on top of stove and deglaze with gravy, scraping up any browned bits of meat loaf that are still on the bottom of the pan. Add 2 tablespoons of flour. Bring to a boil, stirring constantly. Slice meat loaf and arrange on a plate, spoon gravy over top.
